Our Caribbean Great Cake is a rich dessert
made with dried fruit soaked in rum
then pureed for a smooth texture. We make it the Bajan way with
Barbados rum and Falernum. In the West Indies, it is the
traditional cake served at holidays, christenings and any other
special gatherings. For weddings, the cake is iced with a layer of
almond paste and royal icing. Also known as Black Cake, Christmas
Cake and Caribbean Fruitcake.
